Tuna baked with asparagus

Tuna meat is very similar in color, taste, and is cooked until crispy.

Preparing tuna steaks for heat treatment. Defrost, rinse, dry thoroughly. Grate the lemon zest onto a baking sheet and place the asparagus on top. Prepare the sauce: combine lemon juice, oil, spices, pour over asparagus. Place pieces of tuna on top, cover with foil, put in the oven, and cook for twenty-five minutes.

Tuna with teriyaki sauce

The spicy sauce is ideal for gourmet fish; you need to prepare for cooking in advance and buy the necessary ingredients.

Ingredients:

  • steaks;
  • soy sauce;
  • cane sugar;
  • ginger;
  • Sesame oil;
  • garlic;
  • Cayenne pepper;
  • fresh cilantro;
  • rice vinegar;
  • green onions.

: mix soy sauce, squeezed garlic, brown sugar, ginger. Boil the mixture over high heat, add sesame oil. We cook the seafood on the grill mode. Prepare the steaks and remove moisture. Cover a baking sheet with foil, pour in vegetable oil, add steaks, place the pan under the grill, bake for two minutes, pour over the sauce, cook for another two minutes.

Turn over, repeat the procedure, bake for a few minutes until done. Pour gravy over the finished dish. Separately mix chopped green onions, vinegar, cilantro, and a little sesame oil. Place the pieces on a lettuce leaf, sprinkle with green salad, and serve as a piquant, spicy dish.

Steaks in soy-honey marinade

The delicate gravy will highlight the subtle taste of tuna. The dish is prepared quickly and does not cause any trouble.

We cut the carcass, cut it into pieces, wash it, and remove the moisture with towels. Prepare the marinade: combine lemon juice, honey, soy sauce, ground pepper. Prepare the oven, preheat to 180 degrees. Take a heat-resistant container, put foil, pour marinade on top of the slices, cover tightly with foil, make sure that there are no open spaces left.

Place in the oven, bake for fifteen minutes, open the top sheet of foil, turn the pieces over, and cook for another ten minutes. A chic delicacy product in the best traditions of haute cuisine is ready.

Based on my experience in preparing fish dishes, I can say that fried tuna in soy sauce is perhaps the best recipe for this delicious fish. It’s so simple that I didn’t take step-by-step photos, everything is already very clear: the tuna steak needs to be seasoned with spices, salt, poured over soy sauce and left for half an hour. Then fry in oil. Or make another marinade for tuna based on soy sauce, for example, with the addition of ginger or lime - it will also be delicious. It is better to fry tuna in a frying pan over medium-high heat, using good refined oil.

  • Fresh tuna – 2 steaks, 200-250 g each;
  • fine salt - 0.5 tsp. for one steak (salt to taste);
  • soy sauce – 3 tbsp. l;
  • black peppercorns – 1 tsp;
  • any vegetable oil for frying – 4 tbsp. l.

How to fry tuna in a frying pan

Rinse fish steaks under running cold water. If there is a dark film left in the abdominal part, remove it.

Salt on both sides. This fish does not have a characteristic fishy taste or smell, so it is recommended to salt it moderately so as not to overpower the delicate taste of the meat. Leave to salt for five minutes.

Grind the peppercorns in a mortar. Sprinkle the steaks, rubbing the pepper in with your hands.

Before frying tuna in a frying pan, the fish needs to be marinated in sauce, it will turn out juicier. Drizzle each steak with soy sauce on both sides. Stack one on top of the other, cover and refrigerate for 20-30 minutes. This time can be used to prepare a side dish or vegetable salad. As side dishes, fried tuna is served with rice, potatoes in all forms (baked, boiled, mashed, fried), steamed or stewed vegetables in a frying pan.

Pour about 1.5 cm of oil into the frying pan. Heat it, throw in a small piece of bread to check the temperature. As soon as the oil begins to bubble around the piece, remove the fried bread and place the steaks not close to each other, there should be oil on all sides.

Now the main secret is how to fry tuna deliciously. You need to turn the heat higher than medium and quickly fry the tuna steak on both sides. By sealing the fish in this way, we will prevent loss of juice; during further frying, the steaks will remain juicy on the inside and will have a golden brown crust on the outside. Continue frying over medium heat for 4-5 minutes on each side.

Turn off the heat, cover the pan and let the fish cook until done. In 8-10 minutes everything will be ready. With this preparation, the medallions will be completely cooked inside, but will not dry out. The first tuna recipe I decided on was the simplest one - fried tuna in a frying pan. It turned out that cooking tuna is very simple! The fish turned out so tasty that we were ready to eat tuna for breakfast, lunch and dinner with anything and without anything! My personal opinion is that the less magic you do on this fish, the tastier it will turn out. Salt, aromatic black pepper, oil for frying - and the culinary masterpiece is ready!

There are different opinions about fresh tuna. Some people think that this fish is a little dry and needs to be cooked with sauce, for some, barely fried tuna is the most delicious, while others can eat tuna meat raw. We did not decide on a raw food diet, although the fish was the freshest, just a couple of hours from the ocean. I don’t like lightly fried fish, so it was decided to simply fry the first tuna in oil with pepper and salt. And so that the fried tuna does not turn out to be dry, we first marinated the tuna steaks in soy marinade. For the first time, we decided to play it safe - maybe the tuna really wasn’t very juicy and needed a sauce or marinade. I also added a little paprika, but this is not necessary, you can get by with ground black pepper.

  • Tuna steaks – 2 pcs;
  • ground paprika – 2-3 pinches per steak;
  • Freshly ground black pepper – 0.5 tsp. for steak;
  • sea ​​salt - to taste (I use 2 pinches per steak);
  • soy sauce (lightly salted) – 2 tbsp. l. for steak;
  • refined vegetable oil – 4-5 tbsp. l. (for frying fish).

Season the tuna steaks with salt and freshly ground black pepper. First sprinkle on one side and rub into the meat, then turn over and prepare the other side of the steak in the same way. Sprinkle lightly with ground paprika (optional if desired).

Pour soy sauce over the steaks, leave under film or cover with a lid. Marinate the tuna for 10-15 minutes, but you can keep it longer, about half an hour. Just during this time you can cut a vegetable salad or prepare a side dish for tuna - boil rice or potatoes (for our taste it is better to fry them).

Before frying, I secure the cut points of the fish carcass with toothpicks, this can be seen in the photo. You just need to fix the edges of the fish steak so that you get a rounded piece. If you do not do this, the taste of the tuna will not become worse, but the fish will open up, turn around and turn out not very neat. Heat vegetable oil in a frying pan. Place tuna steaks into hot oil. Fry on one side for about 3-4 minutes, it all depends on the desired degree of doneness of the fish. Use a spatula or two forks to pry, turn over and cook on the other side until fully cooked. You can fry for a minute or two, then turn off the heat and cover the pan with a lid. The tuna will be ready.

Serve fried tuna in a frying pan immediately after frying the fish (or keep it covered for a few minutes). You can choose any side dish for fish - rice, vegetables, potatoes, lentils, vegetable stew and much more.

But the main thing is the exquisite and unexpected taste of this sea creature. Tuna fillet is so similar in appearance and taste to cow meat that the French call it “veal of the sea.”

The ideal option for cooking is a freshly caught fish carcass. Since it is almost impossible to get one far from the ocean, you have to be content with chilled or, more often, frozen seafood. In order to protect yourself from that very “not the first freshness”, it is advisable to specify the delivery date of the fish to the market when purchasing.

Tuna fillets should have a uniform light or dark red color. The presence of spots in the color indicates that the product is not fresh.

The secret to preparing this fish deliciously is to marinate it properly. Otherwise, it may become too dry and is unlikely to please gourmets. It is also important to guess how long to fry the tuna in the pan. You shouldn’t keep it on the fire for too long - slightly undercooked steaks are the most tender and juicy. Of course, you can only cook truly fresh fish this way.

How to fry tuna in a frying pan

Ingredients

How to deliciously fry tuna in a frying pan with your own hands

  1. After washing the steaks in running water, remove excess moisture with paper towels.
  2. If the fish pieces are too thick, you need to separate them. Each portion of tuna should be no thicker than 3 cm.
  3. Let's start marinating: mix soy sauce with salt and spices. Generously soak the fish with the resulting marinade.
  4. Leave the fish to soak in the marinade for half an hour, remembering to cover it.
  5. Fry as usual: pour oil into a thick-walled frying pan, heat it, and when it starts to sizzle from contact with moisture, add pieces of fish.
  6. When a golden brown crust appears (3-4 minutes from the start of frying), carefully turn the steak over to the other side and brown it. If you turn them over after just 1-2 minutes, you will get lightly toasted pieces with a raw middle. In order for it to cook, after turning off the heat, you need to cover the frying pan and hold the fish under the lid for a couple of minutes.

Place the finished tuna on fresh lettuce leaves or simply on a plate and serve warm with vegetables or your favorite side dish.

How to cook tuna fillet in a frying pan

There is so much dietary meat in large tuna that it is quite possible to buy a rather impressive piece without a single bone. Cooking and eating it is a real pleasure! To do this, you can use either a regular frying pan or a grill.

Ingredients

  • Tuna fish fillet – about 700 g.
  • Olive oil – 3-5 tbsp.
  • Ground pepper mixture – 2/3 tsp.
  • Salt – 1 tsp.

How to deliciously fry tuna fillet in a frying pan

Prepare the fish for marinating in the same way as in the previous recipe.

  • Divide the fillet into portions weighing up to 200 g and about 2 cm thick.
  • After generously greasing the fillets with oil, salt and pepper them and leave to marinate.

Pour the remaining oil into a frying pan (you don’t have to do this), heat it up high, add the fish pieces. Hot fat blocks the release of liquid from the meat, and all the juices remain inside, which determines the taste of the dish. Brown the fillet on both sides.

Secrets of delicious tuna in a frying pan

  • If the soy sauce is too salty, then less salt should be added to the marinade.
  • If someone does not like the taste of paprika, you can do without this spice. Instead, it would be nice to add a pinch of a ready-made set of spices, which are abundant in grocery stores, or get by with black pepper.
  • We do not recommend using flour for frying tuna.
  • If you have a non-stick frying pan on your household, you can also skip the oil to reduce the calorie content of the dish to a minimum.

To be honest, I have never bought tuna like this before, I only ate it in restaurants, but never cooked it at home. It seemed too expensive to me. But I was not at a loss. Now let's get down to the details and beautiful photographs. How to cook tuna? First, let's prepare the tuna fillet. We definitely use oceanic tuna, large, burgundy. You won't get steaks from anything else. We sell small tuna, but its meat is very different in both taste and color. Don't take this one. I bought two sliced ​​steaks, but if you have a whole piece, cut it into 2.5-3 cm thick pieces. By the way, if it was frozen, defrost it at room temperature.

Prepare the spices: put coriander, fennel, black pepper and salt in a mortar and grind a little, but not completely. If, like me, you don't have a mortar, you can place the spices between two paper towels and tap the top with a flat-bottomed glass. Tuna dishes (fresh or canned) pair well with these aromatic seasonings. Lightly coat the fish pieces in spices.


After this, coat the tuna steak with olive oil. Pour just a little. Tuna fish itself is very dry, it has virtually no fat and contains a huge amount of protein, which is why athletes love to eat it. If you are losing weight, you don’t need to add oil. However, it tastes much better with it.

We put the tuna steaks aside and proceed to the vegetable side dish. Wash all vegetables and herbs and let dry or wipe with paper towels.

Drain the brine from the olives (this is, in general, the same thing) and remove the pits by pressing on the olives with the flat of a knife. You can, of course, use pitted olives, but I warn you - they are not as tasty! I highly recommend removing the seeds yourself. Our Italian salad will sparkle with other colors, tastes and aromas!

Slice the tomatoes. I took different ones: black, yellow, red. And cherry. The latter were cut in half, and the full-size ones into small random pieces. Tuna steak will look more beautiful with colorful tomatoes. Peel the garlic and chop it very finely.

Let's start cooking. We'll figure out how to fry tuna a little later. Let's start with the vegetable side dish. Place the frying pan over medium-high heat. Pour olive oil into it, throw in the olives with garlic and, stirring, fry for 1 minute. Add tomatoes and fish sauce. All. Stir, fry for a minute, then add salt and pepper if necessary, stir, add basil leaves, stir again and turn off the heat. Warm Italian salad is ready.


Let's start with the fish. If you have a grill pan, set it to maximum heat. If normal, set to medium-strong. Heat well and add tuna. The steak will cook very quickly, so cook the tuna for a maximum of 1.5 minutes on one side. Watch how it cooks, it should remain pink inside! We bring it to the state as in the photo. It even took me less than a minute. In a regular frying pan it may take 1.5 minutes.

Turn the tuna, fried on one side, to the other and cook for the same amount of time! Make sure the center remains pink. You can, of course, cook it all the way through if you prefer. But they don’t do this in any Mediterranean country, and they know a lot, I’m telling you!

Remove the tuna steaks from the pan immediately, pour lemon juice over them, you can add a little more olive oil and let them sit for a minute. Now you know how to cook tuna!

In the meantime, let's start serving. Tear lettuce leaves into large plates. Let's make our own tuna salad.

Add a side dish of stewed tomatoes and olives and mix a little. It is most convenient to do this with clean hands. Leave the juice from the tomatoes in the pan.

Break each tuna steak in half and place on top of the side salad. Pour the remaining tomato juice over everything, sprinkle with freshly ground pepper and drizzle with olive oil if desired.

As you can see, it doesn’t matter whether tuna dishes are prepared from frozen or simply fresh, their appearance remains the same.

As for me, this is a perfectly beautiful and colorful tuna dish.

Equally important for serving are the plates, in my opinion. According to my recipes, you can trace the gradation of photogenicity of my dishes 😀 Previously, I had blue, and green, and square, all sorts of different ones! But since we move all the time, they change often. And upon arrival in Kyiv, I opted for dairy products. And, it seems to me, it’s not in vain, they look very good both in the frame and on the table. I love minimalism. What kind of dishes do you prefer?

Brief recipe: tuna steak with vegetable side dish

  1. If the tuna is freshly frozen, defrost the steaks at room temperature.
  2. The ideal thickness of steaks is 2.5-3 cm (cut or buy ready-made).
  3. Grind coriander, fennel, black pepper and salt not too finely.
  4. Roll the tuna steaks in spices, pour a drop of olive oil on them, grease them thoroughly, and leave them aside.
  5. We take out the pits from the olives, cut the tomatoes randomly into medium pieces, cherry tomatoes - in half, garlic - very finely.
  6. Heat a frying pan over medium-high heat, pour in olive oil, add olives and garlic, fry for 1 minute, stirring.
  7. Place the tomatoes in the pan, stir and fry for a minute.
  8. Salt, pepper, add basil leaves, add fish sauce, stir for 20 seconds and turn off the heat.
  9. Heat a grill pan over high heat or a regular grill pan over medium-high heat.
  10. Place tuna steaks in a heated frying pan, fry for a maximum of 1.5 minutes on one side and the other so that the center remains pink, watch the process (I fry for less than a minute, this moment is very important, do not overdry!)
  11. Remove the tuna steak from the pan, pour lemon juice on both sides and let sit for a minute.
  12. We tear the lettuce leaves into plates, place the vegetable side dish on top, and mix with the leaves.
  13. We break each tuna steak in half and place it on top, pour everything with the remaining juice in the pan, pepper and sprinkle with olive oil.
