I think I won’t reveal much of a secret by mentioning that soups in all their forms are very beneficial for the stomach and the body as a whole. Nowadays, we very often eat dry food on the run. Thus, homemade first courses are simply necessary for normal digestion and even as a prevention of gastritis and others like them.
I often cook soups, both regular and pureed soups. If I’m preparing a regular meat soup with vegetables, then I don’t sauté the vegetables, unless of course it’s kharcho, borscht or some other soup that requires frying vegetables. I prefer them "live".
In this recipe I’ll tell you about meatball soup. This time I decided to make it tomato.
For the soup you will need: minced meat - I have pork and beef 50/50; potatoes, carrots, onions, garlic, tomato paste, salt and at the end of cooking I decided to add some spaghetti.

First of all, I put the water to boil and put the onions and garlic in it. I don’t cut the garlic, just whole heads. I cut off 1/3 of the onion to add to the minced meat, and put the rest into the water without cutting.


Next, I proceed to the minced meat. I add onion grated on a coarse grater. Salt and a little ground black pepper.


I thoroughly mix the minced meat and roll it into balls.


I put the meatballs in the water with the onions and garlic. I'm waiting for the ogies to rise from the bottom.


At this time, I chop carrots finely and larger potatoes.


When the meatballs float to the surface, I add vegetables to the pan.


I let it cook for 20 minutes and add 3 tbsp. spoons of tomato paste.


I stir the soup well and let it cook for another 20 minutes. If you have fresh or frozen tomatoes, you can add them along with the tomato paste. About 5-7 minutes before turning off, I put a little spaghetti into the soup - this is according to my husband’s request, in his opinion, pasta should float in any soup :-)

Soup is almost the only dish that children are reluctant to eat. The situation can be easily corrected if you offer your little gourmet tomato soup with meatballs. The bright color and unusual taste will surely appeal to the baby, but we should not forget that tomatoes are considered allergens. And even in the absence of negative reactions of the body to this product, it is undesirable to offer the dish to a child under age.

Meat and vegetables are already included in the diet of a one-year-old baby, but there is no need to rush into frying when preparing dishes, so the proposed recipe consists exclusively of boiled ingredients. Enough has been said about the benefits of vitamin C, but tomatoes contain an even more valuable substance called lycopene, which has several times the properties of the vitamin. Moreover, there is much more of it in processed than in fresh tomatoes.

To prepare you will need:

  • 5 medium-sized tomatoes - or 10 small ones;
  • 1/2 kg minced meat;
  • 1/2 cup short grain rice;
  • 1 egg;
  • 1 small onion;
  • salt and herbs to taste.

1. Mix the minced meat with the egg and onion twisted through a meat grinder. Add a little salt.

2. Form it into small meatballs.

3. Peel the tomatoes and chop them on a grater or using a blender.

4. Sort the rice and rinse with cool water.

5. Pour 2.5 liters of clean water into a saucepan and put on fire. Add meatballs to boiling water and boil for 12 minutes.

6. After the meatballs have cooked a little, the broth must be strained so that there is no excess meat foam. Add rice and meatballs to the broth.

7. Pour in tomato liquid, salt to taste. Cook until the rice is ready - 25 minutes.

  • According to the recipe, tomato soup with meatballs is somewhat reminiscent of kharcho soup without the addition of garlic and spices, since it is also prepared without potatoes. If desired, it can be added before adding rice.

Cooking steps

    It is better to choose fresh meat for meatballs rather than frozen. In this case, their taste will be more intense. Rinse pork or beef thoroughly in running water and prepare a meat grinder for preparing minced meat.

    Grind the meat in a meat grinder and place the minced meat in a separate container. You should also add a chicken egg there. Then peel and chop the onion in a blender or fine grater, add it to the minced meat. Add salt and pepper to taste, as well as a clove of garlic. To prevent the meatballs from falling apart during cooking, there is one little trick: just add two tablespoons of semolina to the minced meat, then mix it thoroughly.

    Now you can cook meatballs from minced meat. You can vary their size as desired. It will be better if you make them the same size. To prevent the minced meat from sticking to your hands, periodically moisten them with water. If you make more meatballs than you need for the soup, you can freeze the rest.

    Pour water into the pan in which you will cook the soup and let it boil. While the water is heating, peel the potatoes and then cut them into small cubes and place them in the boiling water.

    While the potatoes are cooking, you need to prepare the frying. To do this, peel a small onion and peel the carrots, then finely chop and place in a frying pan preheated on the stove. Don't forget to add a little vegetable oil to prevent the vegetables from burning. Fry them until the onions turn golden brown.

    When the frying is ready, add tomato paste or juice to taste to the pan. The optimal amount is 250 grams. Wait for the mixture to boil and let it simmer for a couple of minutes.

    Add basil to the pan to taste, as well as any other spices you see fit, and simmer the dressing for five minutes, then turn off the heat and let it sit a little.

    Pour the dressing into the pan with the potatoes, then start adding the meatballs. To prevent them from immediately sticking to the bottom of the pan, you need to stir the soup using a wooden spoon.

Step 4: prepare the garlic.

Using a garlic press, chop the cloves and place them in a free saucer. We leave the component aside for a while, since we will need it only at the very end of preparing the soup.

Step 5: prepare the rice.


Pour the rice into a sieve and rinse thoroughly under running water. Attention: We do this until the liquid becomes clear. Then pour the cereal into a separate plate.

Step 6: prepare the minced meatballs.


In a free medium bowl, place the minced pork and beef, finely chopped parsley, and also break the egg and add salt and ground black pepper to taste. Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed.

Form the minced meat into walnut-sized meatballs and place on a clean cutting board. Attention: To prevent the mixture from sticking to your hands, we wet your clean hands under running water from time to time.

Step 7: prepare tomato soup with meatballs.


Pour a small amount of vegetable oil into the frying pan and place on medium heat. When the container with the contents is well warmed up, pour in the chopped onion. Carefully place the meatballs into the pan and cook them after boiling again until they float. Attention: If foam forms on the surface, be sure to remove it using a slotted spoon.
Now we take out the meatballs using available equipment and move them into a small saucepan. Cover the container with a lid and leave aside for a while.
Strain the broth through a sieve into another clean pan and place back on medium heat. Add washed rice to the container and cook until done.
Then put the fried onions into the pan and pour in the crushed tomatoes. Mix everything thoroughly with a tablespoon and bring the soup to a boil. Immediately after this, carefully place the meatballs and finely chopped garlic here and turn off the burner. Leave the pan aside and cover with a lid. Let our tomato soup steep for 5–7 minutes.

Step 8: Serve tomato soup with meatballs.

  • milk 0.5 cups

  • potatoes 1 large tuber
  • 1 carrot
  • celery (root) 50 g
  • sweet pepper 1 piece
  • onion 1 piece
  • tomatoes 3-4 pieces
  • turmeric 0.5 tsp
  • bay leaf 1 piece
  • salt, pepper to taste

Preparation

    Tear the bread slices into small pieces and pour milk over them until they are thoroughly wet.

    Lightly squeeze the bread and, after kneading, add to the minced meat.

    Then beat and stir the egg into the minced meat.

    Peel the potatoes and grate them on a fine grater.

    Add the potatoes to the minced meat, mix with your hands until smooth, and then add salt and pepper to taste.

    Form meatballs 3-3.5 cm in size from the resulting minced meat and place them on a baking sheet covered with foil or parchment.

    Place the meatballs in the oven preheated to 200 degrees. Bake them on the top level until golden brown.

    Meanwhile, cook the base - soup. Pour water into the pan and let it boil. Add bay leaf.
    Cut the celery root and carrots into cubes about 1 cm in size. Place the chopped vegetables in boiling water.

    Then cut the bell peppers into the same pieces and add them to the pan next.

    Finely chop the onion and fry it until golden brown. If desired, fry the onion in a dry frying pan or in a small amount of vegetable oil.

    Coarsely chop the tomatoes and grind in a blender.

    Add tomato puree to the pan with the onions. Add turmeric and stir.

    Simmer the tomato for 4-5 minutes and then add it to the soup. Salt and pepper to taste.
    First pour the soup into plates and place 2-3 meatballs on top. Sprinkle tomato soup with baked meatballs with chopped herbs.
