You don’t know what to cook from chicken breast, you want something quick, but very tasty dish without any hassle? Prepare chopped chicken cutlets. Ruddy, fried, with a crispy crust and a juicy center. No dry chicken meat, only tender and soft. The variety of tastes and recipes makes this dish an excellent field for flights of fancy. You can add vegetables or herbs, you can wrap the filling. Use the products you love.

You and I have cooked before, but those were classic ones, rolled through a meat grinder, and this time they will consist of small pieces cut with a knife. This preserves the structure and juiciness of the chicken meat. An excellent variation when you are already tired of regular cutlets.

Chopped chicken breast cutlets are loved by both adults and children. I can vouch for this from personal experience, because it is one of the most favorite dishes in the family. It is very simple and inexpensive, but the taste is always excellent. No long preparation is required; frying such cutlets is no more difficult than or, but only from meat.

Let's start preparing chopped cutlets with classic version, where no additional flavoring additives are used. Only chicken and binding products. To prevent cutlets made from chicken pieces from falling apart during frying, they need to be glued together with something. The easiest way to do this is to add eggs and starch, the most common potato starch. Since there will be only a couple of spoons of starch, it will not taste, but will become an excellent “cement” that will hold all the pieces together and turn them into cutlets. The egg that we will add will also help this, and will also give our cutlets the desired golden brownness and crust, which will be fried very appetizingly. It will be somewhat similar to meat in batter, if you have ever cooked this, you will understand why.

You will need:

  • chicken breast fillet - 500 grams (1 whole breast);
  • eggs - 2 pcs;
  • potato starch - 2-2.5 tablespoons;
  • mayonnaise - 2 tablespoons;
  • salt and black pepper to taste;
  • fresh herbs if desired.

Preparation:

1. Lightly rinse fresh chicken breast cold water and dry with paper towels. It is advisable to do this before cooking any raw meat. Remove the seeds, if any, and any thin remaining films and fat. Cut the breast lengthwise into thin slices, then each slice into thin strips, and then into small cubes.

2. Place the chicken pieces in a bowl and crack two raw eggs into them. Mix well so that the eggs coat all the pieces.

3. Add mayonnaise, salt and ground black pepper. Freshly ground in a mill is better, it is more aromatic. Take the mayonnaise that you usually use, it doesn’t matter.

Stir everything so that it is salted evenly.

4. Now add potato starch to the bowl and stir again. You will see our meat dough thicken slightly and become more viscous and sticky. This is exactly what we need.

5. If you like greens, for example dill, then you can add them now, chopping them thoroughly before doing so. Stir everything well and the future chopped cutlets are ready for frying.

By the way! Chopped chicken cutlets with mayonnaise do not have to be fried immediately. You can leave them to marinate for half an hour to several hours. This will make the chicken meat even more tender, because mayonnaise has good marinating properties. Try both cooking options, immediately and after marinating.

6. And now the simplest point in the recipe, heat a frying pan with vegetable oil and fry the cutlets over medium heat until golden brown on both sides. This is made very simply, literally like pancakes or zucchini pancakes, which we prepared just recently. Place a tablespoon of meat “dough” and lightly press it down so that the cutlet is flat and well-fried inside. Once the bottom side is browned, turn it over and wait for the crust on the other side.

7. Place the finished chopped chicken cutlets on a flat dish lined with napkins or a paper towel so that excess oil is absorbed into them and does not make the food more fatty.

It's time to set the table and invite everyone to dinner before the cutlets get cold. Bon appetit!

Another way to cook delicious chopped chicken cutlets. Let's add a little cheese and garlic to them, it will be very satisfying and aromatic. The cheese will melt during the frying process, but will not leak into the frying pan, but will be securely hidden inside the cutlets. You can add your favorite chicken spices if you find the taste of chicken breast too simple.

You will need:

  • chicken breast - 500-600 gr.;
  • cheese - 100 gr.;
  • eggs - 2 pcs;
  • flour - 2 tablespoons;
  • grainy mustard (French, Dijon) - 2 tablespoons;
  • garlic - 1 clove;
  • salt - 0.5 teaspoon;
  • spices for chicken or turkey - 0.5-1 teaspoon;
  • fresh herbs (dill, parsley) - several sprigs.

Preparation:

1. First of all, cut the washed and dried chicken breast into small pieces. Finely chop the greens. Squeeze the garlic through a press or use a fine grater. Place all this in a bowl and add two raw eggs. Stir.

2. Grate the hard cheese on a coarse grater and add to the chicken and herbs in a bowl. Put two spoons of mustard there. This amount is suitable if the mustard is not spicy, but slightly sweet. Use less spicy mustard.

3. Add two tablespoons of flour to the bowl and stir. The flour will play a binding role. In the previous recipe we used starch. I can tell you from experience that the taste will vary, but both are good.

4. Mix everything very well so that not a single lump of flour remains, and the cheese and herbs are evenly distributed between the chicken pieces.

The whole mass should be thick and dense.

5. Using a spoon, place cutlets of the same size onto a preheated frying pan. Don't forget the oil. Fry on one side over high heat until crusty, then turn over and fry on the other.

6. After browning on both sides, add just a little to the pan. hot water and cover with a lid. Reduce heat to low and cook the chopped chicken cutlets, covered, until cooked through, 2-3 minutes.

7. Serve the finished cutlets with a salad of fresh vegetables, don’t forget about the greens and delicious sauces. Sour cream, mayonnaise and other homemade sauces are ideal.

Very tasty and fast! And the main thing is simple.

Zucchini can be cooked in different ways, one of the ways is zucchini pancakes, including with the addition of meat. But in this recipe the situation is the opposite; you can prepare chopped chicken cutlets with the addition of zucchini. Of course, the proportions in which these products are used will play an important role. But the cooking method will also affect the taste. Chicken breast cutlets consist mostly of chicken meat, and the zucchini is a nice and tasty addition that gives them some zest. I really like this option for its lightness and juiciness. I highly recommend trying it.

You will need:

  • chicken fillet - 1 whole breast;
  • young small zucchini - 2 pieces (or 1 medium size);
  • eggs - 2 pcs;
  • flour - 4-5 tablespoons;
  • salt and pepper to taste.

Preparation:

1. Start by cutting the chicken breast into small pieces. Wash the zucchini, cut off both ends and peel off the skin if it is too thick. Grate the zucchini on a coarse grater and place in a separate plate. Lightly salt and leave for a few minutes, then squeeze out the juice. Mix zucchini with chicken.

2. Add 2 eggs to the chicken and zucchini and mix. Now add the flour and add a little salt, but keep in mind that there is already a little salt in the zucchini. Pepper as desired.

3. Place the frying pan on the stove and heat over high heat. Pour vegetable oil and place the cutlets in a frying pan with a tablespoon. Flatten the tops slightly to cook the cutlets through.

4. Once the bottom side is browned, turn the cutlets over and cook the other side until cooked through. Since the chicken breast cooks quickly, the cutlets will only need a few minutes on one side to cook.

Ready-made chopped chicken cutlets with zucchini are very juicy and tasty; fried zucchini gives them special tenderness. Be sure to try it!

Recipe for chopped chicken fillet cutlets with sweet peppers and tomatoes

Combining tender chicken breast with vegetables only adds wonderful qualities to the dish. And the taste becomes more interesting and juiciness increases, because chicken breast is very lean meat without a single fleck of fat and sometimes it is difficult to cook it without drying out. Bell pepper, in my opinion, goes great with chicken, as do tomatoes. But it is best to take red or yellow pepper.

You will need:

  • chicken breast fillet - 2 boneless pieces;
  • sweet bell pepper - 1 piece;
  • tomato - 1-2 pieces;
  • eggs - 2 pcs;
  • sour cream - 1 tablespoon;
  • flour - 3-4 tablespoons;
  • salt, pepper and fresh herbs.

Preparation:

1. Before cooking a chicken breast, you need to remove the skin and remove any bones if there are any left. If you buy ready-cut fillets, be sure to wash the meat before slicing it. First cut the breast lengthwise into strips and then into smaller pieces.

2. Wash the pepper, cut out the stem and remove the seeds. Cut into thin strips and then into small cubes, no larger than chicken pieces.

3. Don’t forget to wash the tomatoes and cut them into the same cubes as the peppers. If desired, you can remove the skin from them; to do this, make a cross-shaped cut in the area of the stalk and scald them with boiling water. The skin will come off easily.

4. Place all the chopped ingredients in a convenient bowl, add eggs, sour cream and salt. Stir until smooth.

5. Add flour to the bowl and mix. Instead of flour, you can use potato starch; it also helps the minced meat acquire the desired viscosity, and when frying it has almost no effect on the taste. Try cooking both options and choose the one you like best.

6. All that remains is to fry the cutlets in vegetable oil. Make them small; it’s most convenient to measure them with a spoon and immediately place them on a hot frying pan. As soon as a golden brown crust forms on both sides, the chopped chicken cutlets are ready.

These cutlets can be prepared for every day, or you can make a hot treat for the sudden arrival of guests. They cook very quickly, and the result is not only tasty, but also beautiful.

Chopped chicken cutlets with bell peppers, onions and oatmeal

Another variation of chopped chicken cutlets with bell pepper, but this time with onions. And in order for the cutlets to be dense and hold their shape well, it is suggested to add cereals or flour. Past recipes used flour and potato starch for this. So this thickener is also great for cutlet “dough”. The cutlets don't taste at all like oatmeal, you can smell chicken and vegetables. You can add spices, fresh herbs, and, if desired, a little garlic. You will get very aromatic and bright-tasting cutlets.

Chicken breast with champignons is very tasty. You can stew it with sauce, you can fry it with filling, or you can cook chopped chicken cutlets with mushrooms. Essentially, mix pieces of champignons fried with onions directly into the cutlets.

  • egg - 1 pc;
  • onion- 1 PC;
  • butter - 50 g;
  • flour - 2-3 tablespoons;
  • salt, pepper and spices to taste.

Preparation:

1. When preparing chopped cutlets with mushrooms, you should start by cooking the champignons. First, cut the onion into small cubes.

2. Cut clean fresh champignons into small pieces. Heat the butter in a frying pan and let it melt. Place the onion in the oil and fry until soft and slightly translucent. Now put the mushrooms in the frying pan and fry them until cooked.

3. While the champignons are fried, cut the chicken fillet into small pieces. Place it in a deep bowl and add a raw egg.

4. Add fried champignons to the chicken when ready. Put flour there, add salt and pepper to taste.

5. Mix all ingredients well. Fry in a frying pan in vegetable oil until golden brown on both sides. When ready, you can remove excess fat by placing the cutlets on a paper towel.

Serve hot chopped chicken cutlets with mushrooms with fresh vegetables and herbs. It will be very tasty to serve mashed potatoes as a side dish. Bon appetit!

I like chopped chicken breast cutlets with mayonnaise better than cutlets with minced chicken. I like cutlets to feel the structure of the meat, and these cutlets have just that.

At its core, the recipe is simple, all you need to do is chop the chicken breast as finely as possible. Below I will share a secret on how to make this process easier for yourself.

Let's prepare all the products for making chopped chicken cutlets with mayonnaise.

IMPORTANT: Before cutting the fillet, dry it well with a paper towel, put it in the freezer for 5-7 minutes, it will become a little harder and will not slip in your hands when cutting. The photo shows the size of the pieces into which the fillet needs to be cut.

Add the egg and finely chopped onion to the meat in a bowl. You can even grate the onion on a coarse grater.

Now add starch, mayonnaise, salt, ground black pepper, chicken seasoning - in general, your favorite spices.

Mix the resulting minced meat well. Leave the minced meat for 20 minutes, the egg and starch will do their job, and the minced meat will not disintegrate during frying.

Pour enough oil into the frying pan so that the cutlets are almost completely fried in it. The oil should get very hot. After this, spoon the minced meat into the pan, forming cutlets. Fry the cutlets on one side and turn them over to the other. Now reduce the heat to medium and then cook all the cutlets over medium heat, 3-4 minutes on each side.

These cutlets made from chicken breasts with mayonnaise and onions won the love of our family the first time. The ingredients in the recipe are very accessible, and the cooking process itself is simple and exciting. This cooking option is perfect for the situation if you don’t have a meat grinder at hand or you just don’t want to wash it again. So, if you don’t know how to make chicken breast cutlets, we offer our simple recipe, and step-by-step photos will demonstrate the preparation.

We will need:

  • 1 chicken breast or 2 fillets;
  • 3-4 large onions;
  • 180-200 grams of mayonnaise (I prefer 30% fat, use it at your discretion);
  • 1 egg;
  • salt;
  • 1 tablespoon flour (optional).

How to cook chopped chicken breast cutlets with mayonnaise and onions

Chop the chicken fillet into smaller pieces with a knife. The finer it is, the better the consistency of the minced meat.

Also finely chop the onion. Smaller pieces will marinate and cook better.

Mix the fillet and onion thoroughly.

Add mayonnaise and mix the minced meat again. The output should be a thick mass that can easily hold a spoon. Place the resulting minced meat in the refrigerator for 30-60 minutes.

Remove the mince for the cutlets from the refrigerator, add the egg and salt to it.

At this stage you can add flour. It is not necessary to add flour, I do this just to be on the safe side so that the chopped chicken breast cutlets do not fall apart in the frying pan. Usually chicken meat gives good stickiness to minced meat, but no one is immune from trouble. Therefore, a spoonful of flour will not be superfluous. Also, if you wish, you can add various seasonings.

Heat a frying pan and add enough vegetable oil. The fire should be slightly less than medium. Spoon the minced meat like pancakes.

Make the cutlets flatter, this will allow them to cook better. After 5-7 minutes, turn the chopped chicken cutlets over to the other side.

After another 5-7 minutes they can be removed from the heat and served.

Our simple recipe will help you prepare a very tasty dish from available ingredients. Chopped chicken breast cutlets are very tender with an original mild taste. They go perfectly with any side dish - be it, or. Any combination is a great option for lunch or dinner. 🙂

Wash the chicken fillet, dry it and cut into small cubes. Place the chopped meat in a bowl, add salt (there is no need to add too much salt, since mayonnaise will be added later, and it is quite salty), ground black pepper and mix.

Peeled onion, finely chopped, add to the fillet.

Grate the cheese on a medium grater and add it to the onion and chicken.

Beat in the egg, add mayonnaise and sifted flour.

Heat vegetable oil in a frying pan (the oil should completely cover the bottom of the pan). Spoon the meat mixture into the frying pan with a tablespoon (the size of the cutlets can be adjusted to suit your taste).

Fry the chicken cutlets over medium heat on both sides until nice and golden brown (about 3-4 minutes on each side). Do not cover the pan with a lid during frying.

Place chopped chicken breast and mayonnaise cutlets on a paper towel to remove excess fat. Serve hot or chilled with your favorite sauce.
