  • Raisins – 120 gr.
  • Dried apricots – 100g.
  • Lemon zest – 5 g.

Preparation

  1. In a small saucepan or bowl, beat the egg using a whisk or fork until lightly foamy.
  2. Add sugar, zest and kefir to the egg. Stir until sugar dissolves.
  3. Sift the flour.
  4. In a separate bowl, mix flour, salt and baking powder.
  5. Grind margarine (the recipe allows the use of butter) using a grater. Stir into flour mixture. Grind into fine crumbs with your hands.
  6. In one container, combine flour crumbs and kefir mixture. Stir thoroughly.
  7. Pour boiling water (2 cups) over raisins and dried apricots and leave to simmer for 20 minutes.
  8. Place the dried fruit in a colander for a few minutes until the water drains. Remove excess moisture with a clean towel.
  9. Chop dried apricots into pieces of arbitrary size.
  10. Add dried fruits to the resulting dough. Stir until smooth.
  11. From the resulting mass, you need to separate small pieces of dough (approximately 30 grams each), roll them into balls and place them on a greased baking sheet.
  12. Flatten the pieces of dough with a fork until they are a couple of centimeters thick. The distance between cookies should not be less than three centimeters.
  13. Using a mixer, beat the egg. Cover the surface of the cookies on the baking sheet. Sprinkle the cookies with sugar.
  14. Bake in a preheated oven for no more than 20 minutes.

Ingredients

  • Kefir – 240 gr.
  • Margarine – 220 gr.
  • Salt – 3 gr.
  • Flour – 750 gr.
  • Soda – 4 gr.
  • Sugar – 140 gr.
  • Cinnamon – 30 gr.
  • Butter – 40 gr.

Preparation

  1. Heat margarine (the recipe allows you to replace it with butter) to room temperature. Using a knife, chop it into medium-sized cubes.
  2. Sift the flour.
  3. Add soda, salt, flour to margarine. Grind the mixture of ingredients into fine crumbs with your hands.
  4. Pour kefir into the resulting crumbs. Knead the dough. It should be homogeneous and not stick to your hands.
  5. Roll out the dough to half a centimeter thick.
  6. Melt the butter in a water bath. Cover the rolled out dough with it. Sprinkle sugar and cinnamon on top.
  7. Roll into a roll.
  8. Using a sharp knife, cut the roll diagonally. You should get cookies that are about one and a half centimeters thick.

Preparation

  1. Separate egg yolks. In a small bowl, mix them with sugar and grind until smooth (sugar should dissolve).
  2. Heat margarine to room temperature, beat with a spoon. Combine with sugar and yolks. Mix.
  3. Add sour cream, kefir, soda. Mix.
  4. Add flour in small batches, constantly stirring ingredients. Knead into a thick dough.
  5. Continue kneading the dough, folding it into an envelope and pressing it down (without using significant force).
  6. Divide the resulting dough into 4 equal parts. Roll out each piece of dough into a thick sausage. Place in the refrigerator for half an hour.
  7. Cover the baking tray with baking paper.
  8. Pass the chilled dough through a meat grinder (using a pastry attachment or a regular attachment).
  9. Cut the resulting mass of dough into arbitrary pieces.
  10. Place the sand ropes on a baking sheet and form cookies. Bake at 190 degrees Celsius.
  • To prepare shortbread cookies with kefir, it is advisable to use flour with a low gluten concentration. This will result in more tender cookies.

Carefully add the sifted flour into the dough, piece by piece: make sure there are no lumps and knead the dough.

Since our dough contains melted butter, it needs to be put in a bag and in the refrigerator. At this stage the dough should be slightly viscous, but not sticky.

The dough should lie in a cold place for about 15-20 minutes. Then we take it out and roll it into layers. To achieve crispy but soft kefir shortbread cookies, make cookies about 1 cm thick.
