INGREDIENTS FOR 2 SERVINGS

  • 200 g boiled chicken fillet
  • 150 g grapes
  • 100 g walnuts
  • 150 g lettuce leaves
  • 3 tbsp. l. olive oil
  • 1–1.5 tbsp. l. mustard
  • 1 tbsp. l. lemon juice
  • 100 g yogurt
  • salt, pepper to taste

COOKING

  1. Boil the chicken and cut into small pieces.
  2. Wash the grapes, chop the nuts finely. Wash the lettuce leaf and also cut it.
  3. To prepare fitness mayonnaise, mix olive oil, mustard, lemon juice and yogurt in a separate container. Please note that the proportions of ingredients for the dressing can be adjusted to taste!
  4. Mix all the ingredients and season them with sauce. If desired, you can pepper and salt the salad to taste.

French Lover salad with chicken and oranges

Due to the fact that the salad combines several flavors at once - salty, spicy and sweet, it turns out to be piquant and so unusual that it is very difficult to forget its taste. Maybe this is where the playful name comes from.

INGREDIENTS

  • 300 g boiled chicken fillet
  • 50 g hard cheese
  • 1 tbsp. raisins
  • 1–2 carrots
  • 1 tbsp. walnuts
  • 1 orange
  • mayonnaise or sour cream to taste

INGREDIENTS FOR MARINATED ONIONS

  • 2 onions
  • 50–70 ml water
  • 1 tsp. Sahara
  • 1 tsp. salt
  • 1 tsp. vinegar

COOKING

  1. Cool the boiled (or smoked) chicken and cut into thin strips. Or separate it into fibers by hand.
  2. Prepare a marinade from water, vinegar, sugar and salt.
  3. Chop the onions, add to the marinade and stir. Let it marinate for at least 30 minutes.
  4. Peel the carrots and grate them on a medium grater.
  5. Finely chop the oven- or microwave-dried walnuts with a knife.
  6. Pour in the raisins hot water for 10 minutes. Next, drain the water and leave the raisins to cool.
  7. Grate the hard cheese on a medium grater.
  8. After all the ingredients are prepared, you can begin to form the salad. I will say right away that it is not at all necessary to follow this exact sequence. You can experiment and try other options to suit your taste.
  9. Line a salad bowl, preferably plastic, with cling film. Place walnuts on the bottom as the first layer.
  10. Coat this layer with mayonnaise. Place grated cheese on top.
  11. Place grated carrots, salt and coat with mayonnaise.
  12. Next add the steamed raisins.
  13. Place a layer of pickled onions on the salad and also brush with mayonnaise. If you have time, cool the salad for one hour.
  14. Turn the finished chicken salad onto a flat plate. Top it with orange slices.
  15. Salad with orange and chicken ready. Bon appetit!

Viennese salad with rice and bell pepper

INGREDIENTS

  • 400 g chicken fillet
  • 1 bunch of cilantro
  • 1 bunch of celery
  • 200 g cooked rice
  • 2 large bell peppers
  • 2 tangerines
  • curry sauce to taste

  1. Peel and chop the bell pepper and celery.
  2. Peel the tangerines and cut each slice into cubes.
  3. Boil the rice and add cilantro to the salad.

Salad “Lady's whim” with prunes, chicken and cheese

INGREDIENTS

  • 100 g prunes
  • 400 g chicken fillet
  • 4 eggs
  • 200 g fresh cucumbers
  • 100 g hard cheese
  • 180 g mayonnaise

COOKING

  1. Boil chicken fillet, boil hard-boiled eggs.
  2. Pour boiling water over the prunes for 10 minutes.
  3. Cut the cucumbers into strips, and the chicken and eggs into cubes.
  4. Grate the cheese on a fine grater.
  5. Cut the steamed prunes into small pieces.
  6. Place a cooking ring on a platter and place the salad in layers. Sequence of layers: chicken, mayonnaise mesh, cucumbers, mayonnaise mesh, eggs, mayonnaise, part of the prunes, grated cheese and pieces of prunes on top for decoration.
  7. Let the salad stand in the refrigerator for an hour and serve.

“Stolichny” salad with smoked chicken

It is believed that the creator of this famous snack was Ivan Mikhailovich Ivanov, the chef of the Moscow restaurant. He slightly modified the French Olivier, replacing capers, olives, crayfish necks and red caviar with boiled poultry, pickles, and peas.

INGREDIENTS

  • 300 g smoked chicken meat
  • 200 g boiled potatoes
  • 100 g carrots
  • 50 g fresh cucumbers
  • 100 g pickled cucumbers
  • 100 g peas
  • 150 g mayonnaise
  • 3 boiled eggs
  • cilantro, parsley, dill to taste

COOKING

  1. A professional chef smokes chicken thighs in his own smokehouse, but you can, as you understand, do it more modestly. The main thing is that you have smoked chicken, which can be cut into medium cubes.
  2. Boil the potatoes, slightly undercooking. It’s better to boil it in its jacket and peel it later: it turns out much tastier. Cut the potatoes into cubes the size of dice. Do the same with carrots, eggs, pickled and fresh cucumbers.
  3. Mix all this with peas and season with homemade mayonnaise, which is quite simple to prepare: thoroughly rub the mustard with egg yolks and salt, gradually add olive oil, constantly stirring the mass with a whisk, mixer or even a fork.

Salad with chicken, potatoes and pickled mushrooms

INGREDIENTS

  • 300 g chicken meat
  • 300 g marinated champignons
  • 250 g potatoes
  • 30 g hard cheese
  • 100 g mayonnaise
  • 5 eggs
  • bunch of green onions
  • bunch of dill
  • salt to taste
  • viburnum berries or a couple of pomegranate seeds

COOKING

  1. Boil chicken meat and cut into small cubes. You can take chicken drumsticks and thighs, or fillet.
  2. Eggs and potatoes also need to be boiled. Then grate the potatoes on a fine grater. Separate the whites and yolks and grate them separately on a fine grater. Chop the green onions finely and the mushrooms into cubes.
  3. Now start assembling the salad. You can use a serving ring, or if you don’t have one, then an ordinary salad bowl. Place the potatoes in the first layer, level and compact; if desired, you can add a little salt. Next is a mayonnaise mesh.
  4. The next layer is green onions, then mushrooms. On top there is a mesh of mayonnaise.
  5. Next is a layer of yolks, then chicken meat. Thoroughly level and compact the layer, and then brush with mayonnaise. Carefully place egg whites and grated cheese on top. Place the salad in the refrigerator for 1–2 hours.
  6. Afterwards, remove the salad from the refrigerator, remove the serving ring and garnish with dill sprigs and viburnum berries. You can serve it.

Salad with avocado, chicken and bell pepper

Two neutral in taste, but very useful product- chicken and avocado - combined with sweet juicy bell peppers and orange.

INGREDIENTS

  • 1 avocado
  • 250 g chicken fillet
  • 2 bell peppers
  • 1 orange
  • bunch of parsley
  • 2–4 lettuce leaves

DRESSING INGREDIENTS

  • 2 tbsp. l. lemon juice
  • 2 tbsp. l. olive oil
  • 1 tsp. honey

COOKING

  1. Boil the chicken fillet and cut it into cubes.
  2. Cut the avocado pulp into cubes and lightly sprinkle with lemon juice (or lime juice) to prevent it from darkening.
  3. Peel the bell pepper from the stalk and seeds and cut into strips.
  4. Peel the orange and remove the white film, divide it into slices and cut into cubes.
  5. Chop the parsley.
  6. Combine lemon juice, honey, olive oil, salt, black pepper in a bowl and stir.
  7. Place 1-2 lettuce leaves on serving plates and top with all the chopped ingredients.
  8. Pour the dressing over the salad and toss gently.

Salad with cucumber, pancakes and chicken

INGREDIENTS FOR PANCAKES

  • 2 eggs
  • 2 tbsp. l. milk
  • 1 tbsp. l. flour
  • salt on the tip of a spoon
  • vegetable oil for frying

SALAD INGREDIENTS

  • 250 g boiled chicken fillet
  • 1 fresh cucumber
  • 1 onion
  • 1 tbsp. l. 9% vinegar
  • mayonnaise to taste
  • greens to taste

COOKING

  1. Pour two eggs into a bowl, add milk and salt. Whisk.
  2. Add flour and mix with a whisk until smooth.
  3. Grease a frying pan with vegetable oil and fry the resulting dough into pancakes.
  4. Peel and finely chop the onion. Fry in vegetable oil until translucent.
  5. Cut the chicken fillet, cucumber and pancakes into strips. Fresh cucumber can be replaced with salted one.
  6. Layer the salad in layers: onions, half meat and mayonnaise, half cucumbers, half pancakes and mayonnaise.
  7. And repeat: the remaining half of the meat and mayonnaise, the remaining cucumbers, the remaining pancakes and mayonnaise.
  8. Chicken salad ready. Garnish it with herbs and serve.

Salad with smoked chicken and pickled cucumbers

INGREDIENTS

  • 0.5 smoked chicken breast
  • 200 g pickled mushrooms
  • 250 g pickled cucumbers
  • 150 g cheese
  • 2 onions
  • 3 tbsp. l. mayonnaise
  • salt, pepper to taste
  • sunflower oil for frying

COOKING

  1. Peel, wash and cut the onion into half rings.
  2. Pour a little sunflower oil into the pan and fry the onion until golden brown.
  3. Cut the chicken and cheese into cubes.
  4. Cut the mushrooms into small pieces. Put the three most beautiful mushrooms aside - they will be used to decorate the salad. Cut the cucumbers into slices.
  5. In a convenient container, combine all the chopped ingredients and add the cooled onion to them. Salt and pepper. Season the salad with mayonnaise and mix well.
  6. Place the salad in a beautiful bowl and garnish with mushrooms. You can also garnish with grated cheese or parsley sprigs - serving depends only on your aesthetic and taste preferences.

Salad with chicken and walnuts

INGREDIENTS

  • 250–300 g boiled chicken fillet
  • 3 eggs
  • 150 g hard cheese
  • 40 g walnuts
  • mayonnaise to taste
  • olives for decoration
  • salt to taste

COOKING

  1. Boil chicken fillet and cut into small cubes.
  2. Grate the boiled eggs on a coarse grater, and do the same with the cheese. Finely chop the walnuts with a knife.
  3. Place a layer of chicken fillet on a plate, forming a circle, and top with mayonnaise.
  4. Place chopped walnuts in an even layer on top of the chicken and again sprinkle with mayonnaise.
  5. The next layer is cheese. Also grease it generously with mayonnaise.
  6. Place boiled eggs, grated on a coarse grater, on top of the cheese. Form the salad beautifully and neatly using a serving ring.
  7. Once again coat the salad with mayonnaise and place olives or cherry tomatoes on top. Before serving, sprinkle the sides of the salad with grated cheese and decorate the top with snowflakes made from cheese fibers. Bon appetit!
