Almond milk recipe

Many people know that the most useful and delicious product will be exclusively home-made.
Preparing an almond drink is quite simple - all you need is: a glass of almonds, 3 glasses of water, as well as natural sweeteners (dates, Jerusalem artichoke, honey, vanilla extracts, etc.).

To prepare an almond milk drink correctly, the nuts should be prepared first. To do this, they need to be soaked in ordinary drinking water at room temperature for 8-12 hours, the water should be 1 cm above the level of the nuts in the vessel.

After this, the water must be drained and the nuts themselves must be thoroughly rinsed under running water.

At the next stage, we will need a powerful blender, with which we will extract milk. Pour the nuts into the unit and pour 3 glasses of purified water into it, then beat at maximum power for 2 minutes.
Also, in addition to water, you can add one of the above sweeteners: they will not only enrich the drink with new beneficial substances, but also give it completely new flavor notes.

The resulting mixture should be carefully strained through cheesecloth and squeezed, after which the milk is ready for use. If possible, the cake should not be thrown away; it can be thoroughly dried and then used as a spicy addition to baked goods.

Important! For making almond milk at home, only ripe nuts with a low bitterness content are suitable. Young and unripe fruits are dangerous for the human body, as they contain many toxic substances that can be harmful to human health.

Almond milk is not safe for you infants. The product is not able to completely replace breastfeeding, as well as traditional lactic acid products. Additionally, infants may develop nut allergies.

Some store-bought almond milks contain the dietary additive carrageenan, which is derived from red seaweed. This additive is widely used in the food industry for gelling, thickening and stabilization.

Until recently, carrageenan was considered a safe ingredient, but recent studies have shown that it can cause gastrointestinal inflammation, aggravate diseases such as Crohn's disease, ulcerative colitis and coronary artery disease (CAD), and may also contribute to the development of cancer.

On this moment question with this food additive remains open, but the European Union has already banned its use in baby food.

Look for organic almond milk without carrageenan, or best of all, make it yourself. And I ran to the store to look for raw unsalted almonds.

  3. When the almonds swell, peel them so that you can use the pulp from them in the future. If the skin does not separate easily, pour boiling water over the nuts.
  4. Beat the kernels in a blender with water: for 1 cup of nuts - 3 cups of water. You can vary this ratio to produce richer milk or cream. We recommend adding only part of the water at first so that the nuts are ground better, gradually increasing the amount to the required amount.

Preparation

Big photos Small photos

Rinse the almonds and cover with plenty of cold, clean water. Leave the nuts in the water overnight. During this time they will swell and increase slightly.

Drain the water and pour boiling water over them for 15 minutes. This will help you peel them off easily. You can leave the skin on, but then it will give the milk a slightly tart taste and a creamy color.

Transfer the peeled almonds to a blender and add 1 cup of water.

Grind the nuts with water until the nuts are ground as finely as possible. This way they will saturate the water as much as possible. You will see that the water has turned white - it looks like regular cow's milk.

Then add the rest of the water and blend again for 30-40 seconds.
Then strain the milk through thick linen cloth or gauze folded in 4-6 layers.

Squeeze the pulp thoroughly. Do not rush to throw away the cake, it is very tasty and is great as an additive for making sweets, pates and salads.

You can enjoy this milk right away, or you can add a drop of honey or any other additives, such as vanilla and cinnamon.
Almond milk should be stored in the refrigerator for no more than 3 days.

ON A NOTE

Don’t rush to throw away almond cake, it’s very tasty. Use as an additive in homemade candies, chicken pates and any salads. To do this, dry and store in a cool place.

The almond milk recipe can be complicated by turning it into a dessert drink. For example, add some dried fruits to the blender with almonds.

About the benefits of almond milk

Almond milk is an ideal drink for vegetarians. And the best alternative to animal milk on fasting days (coconut and soy milk are still exotic in our latitudes). A quarter (up to 25 percent) of it consists of vegetable protein, moreover, it is devoid of cholesterol (which is especially important for diseases of the cardiovascular system).
